Who doesn’t know peuyeum (fermented cassava) of Bandung? The fermented food is not only famous because of the good taste, but also the cheap price. No wonder if the food became the West Java’s excellent food that the people loved not only by the Bandung citizen, but also the citizen of outside Bandung. They came to Bandung solely for buying peuyeum as gift or to be consumed.
Peuyeum is sold by tied and hang it with bamboo strap, and can be found in Jalan Cihampelas and also in traditional market. The price itself starts from Rp 2.000, - to Rp 4.000, - per kilogram, depends on the quality of the peuyeum. The buyers can choose the peuyeum that they like then measure it. After that the seller will pack it in bamboo basket, or plastic bag.
Making peuyeum is as not easy as buying it. It needs process and special skill, neatness, and carefulness. The cassava itself has to be the chosen one and usually there are two kinds of cassava used to be made as peuyeum – mangosteen and butter. The two kinds of cassava have their own taste and endurance. The taste of mangosteen cassava is not as good as the butter, but it has good endurance. Generally the butter cassava only can stand till two days, more than that it’ll change, like too soft and has bad taste. While the mangosteen it’ll be stand till a week in dry season.
Peuyeum can be served in several ways. You may eat it without any specific preparation or it can be baked and eaten with a special sweet sauce made of brown sugar and coconut. This baked peuyeum is widely known as colenak (which stands for “dicoCOL ENAK” or a delicious dip in English).
